Ingredients
- 120 g pumpkin
- 5 g of onion, a pinch of garlic
- 2 tablespoons of olive oil
- Pinch of salt
- A pinch of nutmeg
- 1 bottle of Ensure® Plus Advance, vanilla flavor
- Water or vegetable broth
- A medium-sized pot
- Blender
- A wooden spoon
Directions
In a medium-sized pot, fry the onion, garlic and diced pumpkin in oil. Add salt, pepper and a pinch of nutmeg. When the pumpkin and onion are golden roasted, pour water or broth over everything so that all the pumpkin is submerged. Cook until tender. When the pumpkin is soft, drain about 1/3 of the remaining water and mix everything in the pot with a stick blender. Slowly stir a bottle of Ensure® Plus Advance vanilla into the resulting soup. Do not boil the soup anymore. Add salt and pepper to taste.
